A Traditional Scottish Dish: Cullen Skink!

A traditional Scottish starter; this soup is so good. While it might not have the nicest sounding name... [insert references to stink here], there's no debating the fact that it is delicious. Well, if you like fish that is. This soup is filled with flaky pieces of smoked haddock so if you're not a fan of good old fish, you're not going to be a fan of this dish. If you are, however, this soup is for you. It's creamy, smoky, warm and filling. Everything you want on a cold day. 

Although this soup is so good, you are going to have to work for it. There's a couple of stages to making this dish, starting off with creating the broth. 
You chop up the onions, leeks and fennel bulbs really roughly, stick it in the pot with the wine and water and nestle the smoked haddock fillets in there. Let it simmer away for half an hour until the haddock is cooked through and then drain the broth and reserve the liquid.


After the broth is made you start with the actual soup.
Again, you just fry off the shallots, garlic, leeks and then add in the cubed potatoes, flaked haddock  and pour in the broth. 


This soup would be really healthy if it weren't for the 500ml of double cream that you pour into it afterwards... But unfortunately that's one of the things that make it so yummy. That, and the pinch of nutmeg and parsley that you add in at the end.
