I've kind of been neglecting my blogging recently :/ I'll have to start getting back into it!

After getting one of my exam results back (which was not what I was hoping it would be) and in anticipation of getting the rest of them, I've been thinking that maybe my future doing law isn't so secure. I've never been entirely sure if it's what I want to do. Maybe it's not for me. Not saying I'm going to drop out or anything like that! It's a great degree to have. I'm just not entirely sure about it.

Whenever I think about my future, the only thing I really want is Danny. And a family. And to be able to travel. And to be happy. I wanna travel the world with him. Go to every country, every city, take pictures and be happy. I can't wait for the days where we can walk around our apartment in just our underwear and stay in bed all day if we want. We'll shower together every morning and make cute dinners and watch movies. Then, at the end of the day, we can fall asleep in each other's arms knowing we'll still be next to each other when we wake up in the morning. It will be perfect.

To be perfectly honest, all I want to do is to buy a little house and spend my whole life with him. Start a family and be happy. I can't wait for that to happen.

That's what I want to wake up to every morning. That's what I want my life to be like. That's what I wish I had now. That's all I want. 

I guess I'll have to wait. But it's a pretty perfect thing to wait for :)

Red Pepper Pasta Bake!

So one of my new year resolutions is to cook more, and I've bookmarked loads of new recipes I want to try, and I made my first one a few nights ago! Red Pepper Pasta Bake.

It was really easy to make and it was really yummy. And filling. I was cooking for me and Ashleigh and we were both drooling in anticipation, waiting for it to be done. Thankfully it doesn't take very long - about 20 minutes, so we didn't have to wait long! 

It's a great meal to make if you want something warm and filling. I would highly recommend it!

Flight Back to Glasgow!

So I always fly Emirates when I travel between Glasgow and Singapore, so I've racked up a number of air miles and I have a Silver Membership Card. Every single time I fly I always ask if there is a possibility of me being upgraded, which normally is answered with a laugh. Same thing happened this time. However, when I was in Dubai and I was entering my gate to board, the guy scanning my ticket told me to hold on for a second and walked off somewhere. I started to panic a little because I thought something had gone wrong with my ticket, however he came back and informed me that I had a business class ticket now because economy was full. I squeaked with excitement when he told me - he looked so unimpressed. 

After the first leg of my journey, I was so tired and felt so sick so being able to sit on a chair that folded down completely flat, meaning I would be able to properly sleep, was a godsend. Not only that, but the air hostess came round asking anyone if they wanted a mattress to put on their seats (!). Plus the food was so good - just look at that lunch menu! I had the Arabic Mezze to start with and then the Beef Pepper Steak, which was delicious.

It was great when I landed as well. We landed, and I was back at my flat within 35 minutes which has never happened before. It was amazing. I was straight through customs, my bag was one of the first ones out, and there were loads of taxi's waiting outside that I was able to get into straight away. It was amazing. Hoping it will happen again!

Family Dinner at Valentino's!

So for my last proper family meal in Singapore before I fly back to Glasgow, we went to Ristorante de Valentino in Turf City. 
For a family place, it was pretty posh - I'm talking waiters pulling out your chairs for you and laying your napkin on your lap every time it came off. The food was pretty posh too.
We all had starters and mains because my mum said the portions were small but I just about managed to finish mine before feeling too full.
I had Minestrone soup which was really good and made me think that it would be a good recipe to make when I'm in Glasgow. 
I followed that up with a pasta dish that had chicken, sun dried tomatoes, cream, cheese, garlic... All the good stuff in the world, really. 

It was really yummy, and as you can see my brother and sister shared a pizza (which I had some of the crusts of, to soak up my pasta sauce)

Definitely a good place to go for a family dinner or a nice couples meal. The food is really good and the service is amazing. It is pretty expensive though... So maybe it's a better place to go for a date, so you can impress your partner!

Sushi Tei with Mum!

I introduced my mum to Sushi Tei in the summer and now she loves it just as much as me, so we decided to go there for lunch on Friday. I'm not actually a big sushi fan, but I love their noodles and their teriyaki dishes.

I got the spicy miso ramen as well as the salmon teriyaki and they were both AMAZING. I couldn't finish all of the ramen because it is a really big bowl and I got full, but what I did eat was delicious. But the best thing there has to be the salmon teriyaki - it is just so incredible.

I love it so much, in fact, that I actually forgot to take a picture of it before I started eating... I only remembered after it was all gone, so all you have is a picture of the remnants - oops! Sorry about that. 

Even if you aren't a sushi fan, this is still a great place to go to eat :)

Such a good night! Went to this rooftop bar with Jess called Altitude - It's the tallest building in Singapore so the view was amazing! 

Had to take an elevator up to the 63rd (!!) floor and although I've never been scared of heights, I have to admit, the ride up freaked me out a little bit...

Anyone travelling or living in Singapore has to go to this bar! Granted it's a tad expensive - you have to pay $SG25 to get up, but on Ladies Night (every Wednesday night) girls can get up for free. Plus they have special offers where all martinis are $SG10 - me and Jess had apple martinis and they were really good

I was looking through someone's tumblr today and they had a sound bar which was playing Medicine by Daughter.
I discovered Daughter a few years ago, but I've gotten a different laptop/i-pod/i-tunes since then so I've lost a lot of my old music, and unfortunately Daughter was one of the bands I lost.
After listening to that song though, I remembered how much I loved their music so I immediately had to download my favourite songs of theirs and I thought I would share them with you :)

Gym Time!

Just got back from the gym and my legs are killing me!

I wanted to try and run 10k, but I got to 5k and was bored so I stopped - I'm so dedicated....
Whenever I go to the gym and run, I always try and run 5k as fast as I can, but I thought I should try a longer distance this time. I went slower so that I could reach 10k (even though I didn't), and it was fine but for some reason my legs hurt a lot more than they normally do...

I should probably try a different method though, and increase my distance 1k at a time - might be a more realistic way of reaching 10k.

Domestic Goddess! [Not]

So after my pasta making skills last night, I thought I would attempt a Cheesecake today :) Didn't think it would be too hard... How wrong I was. First off, I tried putting all the ingredients in a blender but the cream cheese was too thick and it just wasn't working so I had to scrape it all out into a bowl and whisk it by hand. There was a lot of mess and my hand was cramping after about a good - oh, I'd say... 5 seconds. 
Next, as I was pouring the mixture into the tin I realised there was waaay too much and it was not all going to fit.... As you can probably tell from the picture. Again, a lot of mess. Next, I thought I would just have to bake the cheesecake but as it turns out, the recipe called for a water bath - I couldn't really be bothered to deal with that so I looked up another recipe and just put it in the oven for the baking time that one called for. That didn't really work as it came out still pretty much liquid. I put it in the freezer hoping it would set but.... No such luck. I finally gave in and made the water bath. Wasn't as much of a hassle as I originally thought. Would have saved me a lot of time if I had just done that in the first place... That's what you get for being lazy! 

But, in the end, it came out really well! Well it didn't come out of the tin very well.... Me and my mum had to push and pull for a while. Almost resulted in a cheesecake all over the floor... But it was set and it tasted delicious! Nigella Lawson, eat your heart out! - That's the recipe if anyone wants to make it. Learn from my mistakes and get a big enough cake tin and just do the water bath straight off the bat!

Dinner and Miranda with Millie!

Had my friend Millie over tonight for a Miranda marathon. She was shocked that I'd never seen it before so we watched all of season 1 and I absolutely loved it. I thought it was hilarious. I even checked her tour dates and she's coming to Glasgow in March so I might think about going to see her...

I thought I'd cook dinner for us instead of just ordering pizza like we normally do. I've been wanting to try out this Roasted Red Pepper Alfredo recipe for a while now so I thought tonight would be a perfect occasion. It was delicious if I do say so myself!

New Nail Varnish!

So I'm going to a dinner/drinks thing tonight so I thought I might as well paint my nails a new colour. My sister and her fiance got me loads of Ciate nail varnish for Christmas so I thought I would use one of the pastel colours because they seem to be in at the moment, and I normally go for reds/dark colours. I chose the Ciate Sugar Plum nail varnish, and     I think it looks pretty good :)

Back from Gym!

Just got back from the gym!

 My little sister wanted to come with me for some grown up girl time, so she stayed for about 15 minutes.

I didn't do much, just used the elliptical/cross trainer (whatever you want to call it) for half an hour. Did 10k though!

I was going to use some of the weights but there was a group of guys there so I was intimidated haha. Plus it's a really tiny gym. I'm talking 6 cardio machines, 2 of which are broken, and a couple other machines and some weights. So  the guys kind of took over the whole weights area of the gym. Maybe I'll get to use them tomorrow though!

My Favourite Recipes!

One of my New Year Resolutions is to cook more.

Since starting my second year at uni I've really gotten into cooking. Probably because I'm in a flat with friends so we have our own kitchen, whereas last year I was in catered accommodation. Plus, cooking is a great way to procrastinate!

I thought I'd share with you some of my favourite recipes that I've tried so far. I'll post new recipes that I haven't tried yet and comments with pictures on my attempts at making them later on.

Pasta Bake [as my and my flatmate Ashleigh like to call it - it's actually Baked Gnocchi with Bacon, Tomato and Mozzarella]
Oh my goodness. This was so good. Definitely one of my favourite meals I've made. Ashleigh loved it too. It's so easy to make but it's so delicious. I made it without bacon because we didn't have any in the fridge at the time (unheard of for us - we normally have an endless supply of bacon) but I really can't imagine it making this dish any better. So good.

Salmon with Peanut Sauce Noodles
I eat quite a lot of salmon at uni. You can get a pack with about 6 fillets in it at Iceland and it's pretty cheap. I made this cause I was craving some sort of Asian inspired dish and I had a tub of peanut butter in the cupboard that I had yet to use. I actually cooked this without the glaze for the salmon (simply because I was too lazy to make it), but it was still really good.

Chicken in Mustard-Cream Sauce
My mum makes something very similar to this a lot. As well as salmon, I eat a lot of chicken at uni. There's just so much you can do with it! I love this recipe because it's just so easy to make. After a long day at uni you don't want to put too much effort into your dinner and this takes no time at all. Also, it's so tasty.

Cajun Chicken Pasta
I made this for my sister and her fiance one night and it was really good. Really filling as well. It took a bit of time to make, but it wasn't complicated and it was worth it!

Cheesy Chicken, Bacon, Broccoli and Rice
This was a really yummy meal. I made the mistake of putting too much cheese in the sauce so it was really rich and you couldn't eat too much of it, but if I hadn't have done that, this would have been perfect.

P.S. Cafe copycat Bacon, Tomato and Pea Pasta
Okay, so. When I'm in Singapore I always go to P.S. Cafe with Millie and Jess (my best friends from school there) and all three of us always get the same meal. Without fail. It's this smokey tomato rigatoni dish and it is just... Amazing. Well, I was really craving it when I was at uni and I stumbled across this recipe and thought.. I'll just take out the bits I don't want, and put in ingredients that I do! So instead of using spinach in the recipe, I put in peas, and I replaced the mushrooms with bacon. Was so good. Not quite as good as the one from P.S. Cafe, but it'll do whilst I'm at uni!

New Year Resolutions!

Happy New Year everyone!

I can see myself getting addicted to this blog already..
I thought I would share my New Year Resolutions with you all (if anyone is reading this). I don't normally make them but I thought I would this year, because I might just stick to them this time!

1) Cook more! - I have loads of recipes I want to try, so I'm going to make a point of cooking them all
2) Get fit! - I've just started going to the gym and as much as I thought I was going to hate it, I actually don't mind it! So I think I'm going to try new workouts and try and eat healthy
3) Do more! - I've always been a bit... not out there. But this year I want to try and do more with my life. Do things I wouldn't normally do. Like take day trips or go and explore new places. Try new things.

I'll probably blog about all of the things I just mentioned which will motivate me to actually do them!
