The legacy of US Supreme Court Justice Antonin Scalia

My latest article for Affairs Today is up! 

I didn't actually pick this topic, the news editor posted on the staff page asking if anyone wanted to cover it and I volunteered. I had never actually even heard of Scalia before, probably because I don't follow American case law or case outcomes. I thought that seeing as I had a law background (in the loosest sense of the phrase), however, that it would come in handy when researching and writing about the different cases that he's been involved in/decided on and therefore that I would be suited to the topic. 

Although it is very sad that the man is dead, his views and opinions were polar opposites to mine.I don't agree with any of his decisions or dictas and I definitely didn't agree with his ideas about originalism. If you don't know what that is (which I didn't until I read up on him), it's explained in the article. It's a very old school way of American thinking and one which I do not think makes any sense. But, decide for yourselves!

Chicken Lo Mein

I know that for a lot of people, myself included, having to cook every night can get a bit exhausting. Even if you love to cook, you might have had a long day or aren't feeling so good or just aren't in the mood to slave away in the kitchen, and so the easiest option is to spring for the takeaway menu. 

A fan-favourite takeaway option is good old Chinese food. You can never go wrong with some yummy noodles, fried rice or sweet and sour chicken. However, springing for a chinese takeaway can be fattening, sometimes expensive and even takes a while for the food to get there.

This chicken lo mein recipe, however, takes literally about 15 minutes to make. Way quicker than it would be to choose your food, order it, wait for them to make it and then wait for them to deliver it. And probably about half the calories. Not to mention it tastes just as good.


This dish is so yummy and so easy and quick to make. Even after a long day you won't feel like its too much effort to quickly whip up this meal. And you won't regret it either!

The New Body Positive Barbie

A large majority of us grew up with the famous Barbie doll and its unrealistic body goals. Thankfully, Mattel have released a new line of Barbie's that have a more realistic and achieveable image that many young girls, and boys, can grow up appreciating.

Zombie Shaped Shortbread

I went through a bit of a shortbread-craze a week ago. Not only did I make a few chocolate-dipped chocolate shortbread cookies...


... but I also made a few batches of Nigella Lawson's easy shortbread cookies.


What made them even better was that I used these cute zombie shaped cookie cutters.

What better way to celebrate Halloween, a themed party or just any random day where you feel like biting into a cookie in the shape of the undead, than by baking shortbread in the shape of zombies!


Its so fun to make your own dough! To see it all come together, roll it out and cut it out into any shape you want is so satisfying. Plus, covering the shortbread cookies in loads of sugar is always a great shout.

Spotlight: Looking into Child Abuse within the Catholic Church

I thought I had already posted this one but apparently not!
This is my (second) latest post for Affairs Today on the new Oscar nominated movie Spotlight, and the associated issue of child abuse within the Catholic Church.


For anyone who hasn't seen this move already, I highly recommend it. It is so good. Although its a very sensitive topic you never see anything and its not graphic at all, so its not uncomfortable to watch if you were worried about that. As soon as I saw this movie I was compelled to write this piece. So much so, in fact, that I was up till 1AM writing it!

Slow Cooker Coconut Curry Cashew Chicken

I don't remember if I've mentioned this before, but Ashleigh (my flatmate for all those that don't know) got me a slow cooker for my christmas! I've been browsing the internet to try and find some new slow cooker recipes so I can properly break it in and I found this great recipe on an article on Buzzfeed! That app sure does come in handy!

Anyway, the recipe is for a slow cooker coconut curry cashew chicken. Its really creamy and spicy and flavourful and you can put it all in the pot at the beginning of the day and then have it be ready for when you're home! It takes 5 hours to cook on low or 2 hours to cook on high. 

You throw all the chicken and potatoes and peppers (I didn't have peppers in the flat when I made this so I just added more potatoes) and spices into the pot...


... and then add the liquid! Minus the coconut milk. That goes in about 15 minutes before the dish is finished cooking.


You let it simmer away nicely and then you end up with your final delicious product!


I added a slurry into the slow cooker (the recipe tells you how to make that) cause I like the sauce to be a bit thicker then it would have been without the added cornstarch. 

You guys should definitely give this recipe a try if you have a slow cooker! Even if you don't have one, I'm sure you can put all the ingredients in a pot and simmer it for about an hour and it will turn out just as delicious!

Stressing Out/Missing Home: Singapore

 With my dissertation deadline fastly approaching, the thought of exams starting to make me nervous, not to mention the overwhelming uneasiness I'm feeling about my life post-uni and the fact that I have no idea what I'm doing/what I even want to do, its safe to say that my stress levels are pretty high at the moment. 

Its times like these that being at home in Singapore in the heat, surrounded by my family with no cares in the world would be great. I would love to be able to just lounge by the pool all day, go out for lunch with my mum, play with my younger brother and sister and go to the movies with my dad but instead I'm stuck in rainy, windy Glasgow with no escape from the pressures of uni. 

I have some pictures of Singapore from when I was there at Christmas, and I went to Marina Bay Sands and Gardens By The Bay. I thought this would be a pretty good place to post them so I can reminisce about warmer, happier times and anyone else who is away from Singapore at the moment can look at them with longing. Even those who have never been to Singapore but who want to go can look at them and see the beauty that is The Lion City.

Double Chocolate Pumpkin Brownies

This recipe is a long time coming, cause I actually made these brownies over the Christmas period when I was back in Singapore!
At least I got round to posting it eventually, right?

 I made these when I was on my all-things-pumpkin streak and it was another pumpkin success!


I like to think that these recipes that have pumpkin puree in them are healthy, purely due to the fact that there is a form of vegetable in them. However these brownies still have 1 cup of butter, 2 cups of sugar and 4oz of chocolate chips in them so I don't really think they can be classified as 'healthy' unfortunately... 
Although they can't really be considered as wholesome, they are delicious which makes up for their lack of nutritional value!
They're so moist and fudgy and slightly spicy because of the cinnamon and cloves. They're just great to snack on give you something slightly different than your average chocolate brownie.

There's the recipe for whoever wants to give them a shot! I promise you won't be disappointed!

Latest Boko Haram Attack

My latest article is up! So far I've only done opinion pieces so I decided to change it up a bit and I wrote a news piece about the latest Boko Haram attack. 
Its such a sad situation for those affected by their assaults and something more needs to be done to focus attention on stopping the extremist group.
